
How fun is this green color & it’s natural without food coloring??
No food coloring need bc the chlorophyll in sunflower seeds reacts with baking soda when baked. This causes the green color once cookies have cooled. A fun science lesson for baking with the kiddos too!
As always, easy one bowl recipe. GF, DF, Nut free, paleo/vegan options, sugar free and keto/low carb.
INGREDIENTS
WET:
- 1 c sunflower butter @sunbutter
- 1/2 c egg whites or 3 eggs or flax eggs for vegan
- 2 tsp vanilla extract
DRY:
- 1/2 c coconut flour
- 1/4 c The Peachie Spoon Unflavored Collagen Powder
- 1/3 c monk fruit or granulated sweetener of choice
- 1 tsp baking soda (not powder)
- Desired dark choc chips or pieces to top.
STEPS
- Combine wet ingredients in a bowl. Add all dry except the chocolate. Stir well.
- Form into cookie shapes (they don’t expand while baking).
- Press chocolate onto the top of cookies and bake 350° 10 min. Made 12. Store in fridge.

I haven’t tried without but it may work! Love that it makes them chewy and adds Protien
It says as always vegan option. However there is now vegan replacement for the collagen… It’s grass fed animal . That is not vegan
Could I use honey instead of granulated sugar? Or will that mess up the dry/wet ratio? Thank you for this fun recipe!
