St. Paddy’s Day Cookies

st. patrick's day cookie recipe

How fun is this green color & it’s natural without food coloring??

No food coloring need bc the chlorophyll in sunflower seeds reacts with baking soda when baked. This causes the green color once cookies have cooled. A fun science lesson for baking with the kiddos too!

As always, easy one bowl recipe. GF, DF, Nut free, paleo/vegan options, sugar free and keto/low carb.

INGREDIENTS

WET:

  • 1 c sunflower butter @sunbutter
  • 1/2 c egg whites or 3 eggs or flax eggs for vegan
  • 2 tsp vanilla extract

DRY:

STEPS

  1. Combine wet ingredients in a bowl. Add all dry except the chocolate. Stir well.
  2. Form into cookie shapes (they don’t expand while baking).
  3. Press chocolate onto the top of cookies and bake 350° 10 min. Made 12. Store in fridge.

Is there a brand of sunbutter you recommend and does it contain sugar?

thepeachiespoon replied:
I use sunbutter brand. They have one that’s just sunflower seeds and salt for the ingredients.

Melissa

Are there any swaps for the collagen? Thanks!
———
thepeachiespoon replied:
Collagen makes them chewy and I haven’t tried without but you could omit or try a different type of protein powder.

Could you swap the sun butter for a different type of butter?

Thanks!

thepeachiespoon replied:
Yes but they won’t be green

Shawn

Could all purpose flour be a sub for the coconut flour? Or almond flour?
———
thepeachiespoon replied:
Yes! An equal swap would be 1 1/2 cups of almond or regular flour. Almond adds more fat and wheat flours adds more carbs.
