St. Patty’s Day Cookies

How fun is this green color & it’s natural without food coloring??

No food coloring need bc the chlorophyll in sunflower seeds reacts with baking soda when baked. This causes the green color once cookies have cooled. A fun science lesson for baking with the kiddos too!

As always, easy one bowl recipe. GF, DF, Nut free, paleo/vegan options, sugar free and keto/low carb.


INGREDIENTS

WET:

  • 1 c sunflower butter @sunbutter
  • 1/2 c egg whites or 3 eggs or flax eggs for vegan
  • 2 tsp vanilla extract

DRY:

  • 1/2 c coconut flour
  • 1/4 c unflavored collagen 
  • 1/3 c monk fruit or granulated sweetener of choice 
  • 1 tsp baking soda (not powder)
  • Desired dark choc chips or pieces to top.


STEPS

  1. Combine wet ingredients in a bowl. Add all dry except the chocolate. Stir well.
  2. Form into cookie shapes (they don’t expand while baking).
  3. Press chocolate onto the top of cookies and bake 350° 10 min. Made 12. Store in fridge.

PROTEIN collagen, egg whites
FAT sunbutter, dark chocolate
FIBER coconut flour
CARB/STARCH none or coconut sugar/sugar if using

Wow! These are sooo fun! My girls love them, what a fun surprise and honestly I feel like they are nutrient dense enough we’re going to make them often. We used sun warrior vanilla protein instead of collagen, and coconut sugar

I was so skeptical about this actually working and it TOTALLY DID. Absolutely made my day!
I subbed AP for the flour and didn’t use collagen powder at all. I didn’t see the comment about using 1.5 cups of AP for the ratio to coconut flour so I used 3/4 cup AP flour and it worked! I also used boxed egg whites and real sugar. They did spread but enjoyably so- nice and soft and chewy. We will make these again!

Never mind! It works! The key ingredient is patience! Haha. You have to wait 10-15 minutes!

Followed recipe exactly. It absolutely works (and worked immediately)! If you are having issues turning green it’s probably either old baking soda or the sun butter has too many added ingredients interrupting the chemical reaction

If doing this without collagen, do you just replace with more coconut flour? Or could you substitute unflavored whey protein? We’re vegetarians, and I don’t think I’d be able to get a vegan collagen in time to make these for st Patrick’s day.

I’d try with some whey! The collagen makes them chewy so the texture may be diff but it’ll work
