
How fun is this green color & it’s natural without food coloring??
No food coloring need bc the chlorophyll in sunflower seeds reacts with baking soda when baked. This causes the green color once cookies have cooled. A fun science lesson for baking with the kiddos too!
As always, easy one bowl recipe. GF, DF, Nut free, paleo/vegan options, sugar free and keto/low carb.
INGREDIENTS
WET:
- 1 c sunflower butter @sunbutter
- 1/2 c egg whites or 3 eggs or flax eggs for vegan
- 2 tsp vanilla extract
DRY:
- 1/2 c coconut flour
- 1/4 c unflavored collagen
- 1/3 c monk fruit or granulated sweetener of choice
- 1 tsp baking soda (not powder)
- Desired dark choc chips or pieces to top.
STEPS
- Combine wet ingredients in a bowl. Add all dry except the chocolate. Stir well.
- Form into cookie shapes (they don’t expand while baking).
- Press chocolate onto the top of cookies and bake 350° 10 min. Made 12. Store in fridge.

Can I omit the collagen or is there an alternative?

I haven’t tried without but worth a try!
So to use regular wheat or all purpose flour it would be 1.5 cups? Not just 1/2 cup like the coconut flour?

I would love to know if anyone has had success with a vegan collagen / alternative. I’d love to bring these to my kids class if so! (I made a batch tonight as described in the recipe using sunbutter brand sugar free + granulated sugar as mg sweetener and they’re immediately green!)

The color can be deceiving at first it does not have any green in the middle like the picture but if you let it set for a little bit eventually, it will turn green at first. I thought I did something wrong or it was not real.

Unfortunately, these cookies do not turn green as the picture advertises, it’s probably AI generated. There may be a slight green hue to the entire cookie, but that’s because sunflower butter has a slight hue to it.

Oh goodness! This is not Ai. Some batches I’ve made take a few hours to turn more green. Everyday they get greener. This pic is the day after baking them
