How fun is this green color & it’s natural without food coloring??

No food coloring need bc the chlorophyll in sunflower seeds reacts with baking soda when baked. This causes the green color once cookies have cooled. A fun science lesson for baking with the kiddos too!

As always, easy one bowl recipe. GF, DF, Nut free, paleo/vegan options, sugar free and keto/low carb.


INGREDIENTS

WET:

  • 1 c sunflower butter @sunbutter
  • 1/2 c egg whites or 3 eggs or flax eggs for vegan
  • 2 tsp vanilla extract

DRY:


STEPS

  1. Combine wet ingredients in a bowl. Add all dry except the chocolate. Stir well.
  2. Form into cookie shapes (they don’t expand while baking).
  3. Press chocolate onto the top of cookies and bake 350° 10 min. Made 12. Store in fridge.

PROTEIN collagen, egg whites
FAT sunbutter, dark chocolate
FIBER coconut flour
CARB/STARCH none or coconut sugar/sugar if using

What makes them turn green? Was thinking about replacing pb for the sun butter but, didn’t want to ruin the magic.

The green only turns up as it cools! I took them out of the oven thinking they were a flop. :-D So cool to watch the process as it cools. Wonderfully green. I made my own sunflower butter. I substituted 2 cups freshly milled flour and maple syrup flakes and pressed almond flakes instead of chocolate and they were delicious. My husband wanted them sweeter but great for the kids.
As they cooled in a pile as we traveled, the center ones turned green on the outside and the cookies on the edge stayed brown on the outside. Would a cooling rack fix this?
