
Can’t have oats?! No problem aaaand fiber and protein goals…sorted. These are such a fun prep every week! Happy fall mouth partying.
This recipe is a great meal prep for an anytime complete meal. N’Oats are perfect for my friends whose tummies don’t do oats well or want to stay lower carb and skip any oats to keep blood sugar levels more stable. It’s almost your whole days worth of fiber and is high protein, so a perfect break-fast meal to keep late afternoon cravings at bay. Yes, so crazy your breakfast can set the tone for hunger and cravings. All. Day. Long. So vital to make this easier and not rely on willpower. That never would work for me. It’s grain free, dairy free, sugar free, and zero blood sugar spike for me, but of course that’s always individual.
INGREDIENTS
1 cup milk of choice, used unsw almond
2 T pumpkin puree
1/4 cup coconut flour (if needing a swap, use old-fashioned oats and reduce milk to 2/3 cup)
2 T ground flaxseed or psyllium husk (whole flakes, 1 T if using husk powder)
1 serving The Peachie Spoon Vanilla Protein Powder
1 scoop The Peachie Spoon Unflavored Collagen (optional)
1/4 tsp vanilla extract (optional)
1/4 tsp pumpkin pie spice
dash of salt
Topping (healthy fats)
1-2 T nut butter or melted butter (usually do nut butter)
Also a sprinkle of low sugar granola is fun too
STEPS
1)Add milk to a mason jar or covered bowl. Add other ingredients, besides the nut butter/butter.
2)Stir well or shake well with lid on and store in the fridge overnight and good for about a week. Top with nut butter while prepping or before eating. Either way.

Do they have to sit overnight? If not, what is the least amount of time they need to get the right texture?
