No-Bake Peppermint Mocha Energy Bites

A delicious and energizing treat perfect for a quick pick-me-up. To create these delightful bites, start with a base of almond or cashew butter for creaminess and nutty flavor. Add mocha or chocolate flavored protein powder for a protein-packed punch and coconut flour for a soft, dough-like texture.

Include oats (GF if needed) for heartiness and a bit of texture. Infuse a refreshing hint of peppermint with half a teaspoon of peppermint extract. Pour in cooled or cold brew coffee to enhance the mocha flavor and provide a slight caffeine kick. Stir in dark chocolate chips for that perfect chocolatey touch. Mix everything together, then roll the dough into bite-sized balls.

The result? No-Bake Peppermint Mocha Energy Bites that are not only quick and easy to make but also a delightful and energizing snack. Enjoy the cool and invigorating flavors in every bite!

INGREDIENTS

  • 1/2 c almond or cashew butter

  • 1/4 c mocha or chocolate flavored protein powder

  • 1/3 c coconut flour

  • 1/4 c oats (GF if needed)

  • 1/2 tsp peppermint extract

  • 1/4 c cooled or cold brew coffee

  • 1/4 c dark chocolate chips

    STEPS

  1. Combine all ingredients in a bowl. Stir. You may need to use your hands, I always do. Add a splash more coffee if too dry to form balls and add a tiny bit more flour if too wet. You can’t mess these up. Dip into crushed candy canes if feeling extra festive. Make 10 balls. Store in the fridge.

Notes: As always these are a blood sugar balancing snack or dessert because of that perfect trio of healthy fats, protein, and fiber.
