INGREDIENTS

1 c milk of choice (used unsw almond)

1/4 c coconut flour

2 T flax, chia, or psyllium husk (1 T for husk powder)

1 serving The Peachie Spoon Vanilla Protein Powder

1 scoop of The Peachie Spoon Collagen Powder (optional extra pro or use more flavored)

1 T grassfed butter, melted @kerrygoldusa

dash of pink salt @redmondrealsalt

1/4 tsp vanilla extract or 1/4 tsp almond extract. I like to change it up and alternate.
STEPS

Melt butter in the mason jar for 30 second in the microwave, add milk and other ingredients. Stir well with a spoon or shake well with lid on. Store in fridge. Good for a week.

Optional icing: I did a heaping tablespoon of vanilla @ratiofood protein yogurt. Any yogurt would work here and isn’t “needed” just a fun extra.

I almost always eat it cold but you can heat it. Maybe stir a bit more
Is there something I can use instead of coconut flour? Would regular flour work?

yes but 1/4 c coconut flour = 1 c all other flours so can wise, if just use the overnight oats recipe instead of the N’oats
I’m confused about the carb content, I thought this was supposed to be a low carb option. I use coconut and almond flour regularly, they don’t contain that level of carbs.

The psyllium husk has 10g fiber and 10g carbs. This recipe is low in net carbs and high in fiber

A scoop fo collagen for extra protein. You can also add a little more of regular protein. Totally optional, I just feel my best with this amount per meal
What can we use instead of butter if we can’t have dairy?
