High Protein Rotel Queso Dip

INGREDIENTS

  • 1 - 16 oz container low fat cottage cheese
  • 1/4 cup nutritional yeast
  • 1/2 c shredded sharp cheddar cheese
  • 3 T taco seasoning
  • 1 lb lean ground beef
  • 1 - 10 oz. can rotel, not drained (mild or original)
  • 2-3 T milk or water (if needed while blending to thin)

STEPS

1)Blend cottage cheese, nutritional yeast, shredded cheddar, and taco seasoning in a blender or food processor and set aside. *add a splash of milk if needed while blending. Some brands of cottage cheese are thicker.

2)In a skillet over medium heat, cook and crumble beef until cooked through.

MICROWAVE - If serving in a large bowl add beef, and rotel to the cheese mixture in a large bowl and microwave 1-2 minutes in intervals to melt cheese and serve.

STOVETOP - if no microwave, you can add the cheese mixture and rotel to the cooked beef in the warm skillet to melt the cheese over low heat, stir and serve in a large bowl.

SLOW COOKER - (my fave) Place cheese mixture, rotel, and cooked beef in the slow cooker on warm and stir. It can sit for hours and stay warm. Stir occasionally.

Serve with your fave tortilla chips and/raw veggies. If feeding a crowd, double or triple the recipe.

*For lactose free - use lactose free cottage cheese and skip the shredded cheese.

I’m out of cottage cheese would plain Greek yogurt work? 😬

Honestly haven’t tried that as a swap!

This was so good! My whole family liked it (even the ones that “don’t like queso”). It tasted like tacos!!
I bet you could use the cheese base for a lot of other things including a plain cheese dip. Also I felt like 1lb was a lot of meat- not in a bad way, but if you didn’t want to use a whole pound I bet it would still taste so great!

Thx for commenting! And yes, I have high pro Alfredo and lots of twists on the sauce. So easy too

The flavor was great! But mine was super runny also and then started to separate after adding the cheese sauce and rotel into the beef skillet on the stove

The rummy factor can depend on the brand of cottage cheese. Mine has done that too!

Made it with turkey sausage and didn’t have the energy to run grab nutritional yeast so left it out. Soooo delicious and I feel so much better eating it!
