INGREDIENTS
- 1 - 16 oz container low fat cottage cheese
- 1/4 cup nutritional yeast
- 1/2 c shredded sharp cheddar cheese
- 3 T taco seasoning
- 1 lb lean ground beef
- 1 - 10 oz. can rotel, not drained (mild or original)
- 2-3 T milk or water (if needed while blending to thin)
STEPS
1)Blend cottage cheese, nutritional yeast, shredded cheddar, and taco seasoning in a blender or food processor and set aside. *add a splash of milk if needed while blending. Some brands of cottage cheese are thicker.
2)In a skillet over medium heat, cook and crumble beef until cooked through.
MICROWAVE - If serving in a large bowl add beef, and rotel to the cheese mixture in a large bowl and microwave 1-2 minutes in intervals to melt cheese and serve.
STOVETOP - if no microwave, you can add the cheese mixture and rotel to the cooked beef in the warm skillet to melt the cheese over low heat, stir and serve in a large bowl.
SLOW COOKER - (my fave) Place cheese mixture, rotel, and cooked beef in the slow cooker on warm and stir. It can sit for hours and stay warm. Stir occasionally.
Serve with your fave tortilla chips and/raw veggies. If feeding a crowd, double or triple the recipe.
*For lactose free - use lactose free cottage cheese and skip the shredded cheese.

Hi, i live in Scotland. What can I sub Rotel with ?

A pico de galo or chunky style salsa works great!
Do you have to use the nutritional yeast or is it okay to omit that?

You can omit!
This was really good! I didn’t have nutritional yeast so I left it out, but I will get some for next time! I used Good Culture lactose free cottage cheese and lactose free Vermont cheddar— so nice to enjoy a dip I remember from my childhood, but without the yummy troubles and a protein boost! The consistency was perfect for me, but I did leave out quite a bit of liquid from the rotel. Thank you Meredith!

Thanks so much for commenting! Makes me so happy. Love those tweaks. I do that usually too bc one of my boys is lactose intolerant. All the nostalgia with a feel good balance ha 🥳🥳
What about adding refried beans?

I saw in the comments, a few questions about substituting with Greek yogurt… I tried it and it did not turn out! I am looking forward to trying again with cottage cheese.
