INGREDIENTS
- 1 - 16 oz container low fat cottage cheese
- 1/4 cup nutritional yeast
- 1/2 c shredded sharp cheddar cheese
- 3 T taco seasoning
- 1 lb lean ground beef
- 1 - 10 oz. can rotel, not drained (mild or original)
- 2-3 T milk or water (if needed while blending to thin)
STEPS
1)Blend cottage cheese, nutritional yeast, shredded cheddar, and taco seasoning in a blender or food processor and set aside. *add a splash of milk if needed while blending. Some brands of cottage cheese are thicker.
2)In a skillet over medium heat, cook and crumble beef until cooked through.
MICROWAVE - If serving in a large bowl add beef, and rotel to the cheese mixture in a large bowl and microwave 1-2 minutes in intervals to melt cheese and serve.
STOVETOP - if no microwave, you can add the cheese mixture and rotel to the cooked beef in the warm skillet to melt the cheese over low heat, stir and serve in a large bowl.
SLOW COOKER - (my fave) Place cheese mixture, rotel, and cooked beef in the slow cooker on warm and stir. It can sit for hours and stay warm. Stir occasionally.
Serve with your fave tortilla chips and/raw veggies. If feeding a crowd, double or triple the recipe.
*For lactose free - use lactose free cottage cheese and skip the shredded cheese.

I made this and it separated. The cheese was thick and stuck together. Not sure what I did wrong. The flavor is great thought.

So sorry! Mine has been a different texture sometimes and I think it can be the batch or brand of cottage cheese used.
Really good!!!! I added some crushed red peppers to give it a little kick. Yummy

The original/regular
That looks amazing! I noticed some comments about the texture being runny. You said it depends on the brand of cottage cheese. What brands work? I have Daisey in my fridge now. Thanks so much!

I’ve used daisy, good culture, and lactaid and all work great! Some batches are more runny than others. You could strain the rotel too. That’s another option. We always love it no matter ha
This looks sooooo good. I’m excited to try it
