Dubai (inspired) Chocolate Chia Pudding

This flavor is so fun. I wanted to give the viral Dubai chocolate vibe an American twist using easy, everyday ingredients you can find at any grocery store and of course sugar free. After waiting in a very long line for a strawberry Dubai chocolate cup in NYC, I couldn’t stop thinking about ways to recreate that flavor at home.

This one’s a feel-good, high-fiber, high-protein, blood-sugar-friendly meal-prep win. Hope you love it as much as I do. 

 

INGREDIENTS

1 1/2 c unsweetened almond milk (or desired milk)

2 T shelled pistachios 

1 T unsweetened cocoa or cacao powder

2 servings The Peachie Spoon Chocolate Protein Powder 

1/4 tsp pistachio extract (optional, and literally a couple drops is enough, it’s super strong)

dash salt

1/2 c chia seeds 

8 - shredded wheat cereal, crumbled (used Publix brand not frosted)

Optional Toppings :

Sliced fresh strawberries

Dark chocolate chips, melted or not

Chopped pistachios

Crumbled shredded wheat cereal

STEPS

1)In a blender combine all ingredients except shredded wheat. Blend well

2)Pour half of the blended mixture evenly into 2 glass jars or containers with lids. 

3)Crumble shredded wheat cereal and add 4 to each glass jar. Stir well or shake with lids on. Add toppings, if desired 

4)Place in fridge overnight to turn into desired pudding texture. Store in fridge. Good for up to a week. Makes 2 servings
