2 medium ripe bananas

1 c cottage cheese

1/2 c egg whites

2 tsp vanilla extract

DRY

1/2 cup coconut flour

1/3 cup vanilla protein powder

1 tsp baking soda
-
1 tsp cinnamon
-
dash pink salt
-
1/3 c desired chocolate chips &/or nuts (optional) used Lilys dark chips

STEPS

Mash bananas with a potato masher. Stir in cottage cheese, whites, & vanilla extract and stir.

Add all other ingredients and besides chocolate chips and stir until combined. Add chips.

Bake at 350° in a lined or sprayed 10” bread pan for 50-55 minutes or 20-25 min for muffins in a lined muffin tin. Store in fridge. Good for up to a week. Makes 8 slices

No clue what I did wrong with this recipe but after 55 mins – the bread was still runny.. I left it in for another 10 mins but it was burnt on the top. Maybe it is better as muffins.

Made these into muffins and they were delicious! They needed the full 25 minutes and turned out very moist.

I made these as muffins today. I didn’t have bananas, so I used applesauce. Good but I love the banana flavor. I dislike prunes but have been looking for a way to include them in my diet for bone health. I substituted chopped prunes for chocolate chips, and it’s the only way I’ve found that I can enjoy prunes. I still love chocolate the most (duh!), but am glad I’ve found a way to tolerate the taste of prunes.

I just made this for the first time. It tastes delicious, but upon resting the loaf completely deflated. I cooked it for 50 minutes and a toothpick came out clean. I’m wondering if I needed to bake it longer or if a more dense bread is typical with these ingredients.
