I just made this for the first time. It tastes delicious, but upon resting the loaf completely deflated. I cooked it for 50 minutes and a toothpick came out clean. I’m wondering if I needed to bake it longer or if a more dense bread is typical with these ingredients.

I’m not able could I use pumpkin instead? If so, how much would be needed? Thank you.
Would almond flour work? If so, would the proportion change?
Just made this and while it is super tasty, mine came out very deflated and crumbly. Should we be using baking powder instead of soda?
