
WET INGREDIENTS:
1 c pumpkin puree (can’t taste promise & yay for vitamin A)
1/2 c liquid egg whites
1 c nonfat Greek yogurt
1 tsp vanilla extract
1 tsp butter extract
DRY INGREDIENTS:
2/3 c The Peachie Spoon Cookies and Cream Protein Powder (the best for baking texture)
2 T black cocoa powder (optional)
1/2 c coconut flour
2 tsp baking soda
STEPS
1)In a large bowl, combine wet ingredients and stir. Add dry ingredients and stir to combine.
2)On a large lined sheet pan, form into 12 cookie shapes. Mine were about 1/4 cup of batter a piece. If you have an XL sheet pan, use that.
3)Bake at 375° for 10-15 minutes or until set. Place on a cookie rack to cool. After cooling, make icing below and smear 2-3 T per cookie and make into cookie sandwiches. Store in the fridge for up to a week. I like to microwave mine for 15-20 seconds before enjoying but of course yummy cold too!
ICING
1 - 8 oz 1/3 less fat cream cheese, softened
1/4 cup confectioners sugar replacement @swervesweetie
1/2 tsp vanilla extract
3 sandwich cookies, crumbled (used Catalina crunch brand)
Stir ingredients in a bowl and smear over cookies, making cookie sandwiches.

This is the 3rd of your recipes that I’ve made and it’s SO GOOD. I added about 1/3 of monkfruit to the cookie batter and they[re so chocolatey with just the right amount of sweetness.
For the filling, I used oreo thins that I had on hand and scraped out the cream and crushed them up. This truly does HIT the sweet tooth spot and the filling brings in the decadence without the crash that comes after eating a Crumbl, which are too sweet in my opinion to even enjoy. Thanks again for the yummy recipe, adding this to my luteal phase rotation. :)

I enjoy your posts on Instagram and always feel compelled to make the recipe. I bought everything (not cheap stuff between egg whites, coconut flour and the protein powder) and the texture is just off. Without the icing the cookies are bland and not sweet at all. Bummed and now have a lot of coconut flour and not sure what to do with it. Again not cheap stuff.

So sorry! I didn’t taste them without the icing but you can always add monk fruit to the cookie batter if you want the cookies sweeter. They are a healthier sugar free swap and won’t be as sweet as a crumble cookie of course. For the coconut flour, it’s my go to since it’s the only flour that’s low carb, high fiber, and low fat so i have many recipe with it. Search coconut flour on my website and all the recipes will pop up
What if I don’t have cookies and cream protein powder
Could you use oat flour?
