Collagen Reese’s Oatmeal Cookies

Indulge in the delectable goodness of Collagen Reese's Oatmeal Cookies with this delightful recipe. Combine 2/3 cup The Peachie Spoon Chocolate Protein Powder with 1 cup old-fashioned oats, 1/2 cup coconut flour, 1/4 cup monk fruit sweetener, and a sprinkle of salt in a mixing bowl. Add in 1/2 cup drippy natural peanut butter, 2 teaspoons vanilla extract, and 1/2 cup unsweetened milk (almond or cashew).

Form the dough into cookies, topping each with desired dark chocolate chips. Bake to gooey perfection for a scrumptious treat that combines health and flavor in every bite.

INGREDIENTS

STEPS

  1. Combine dry ingredients. Add wet and stir until well combined.

  2. Place on a lined cookie sheet and form into desired cookie shape. These don’t spread while baking. The dough will be sticky but it’s worth it for the chewy cookie factor. You can put Avo oil on your fingers so it doesn’t stick or just lick your fingers because it’s edible dough.

  3. Press 3 chips into to top of each cookie if desired.

  4. Bake 350° 12 min or so.

  5. Let sit 20 min to cool and set. Sprinkled mine with coarse sea salt and cinnamon but that’s up to you! Made 12 - 2” cookies.

Notes: If you’re vegan they’re already eggs-less, just use a vegan protein instead of collagen but the collagen is the chewy magic.
