Buckeye Brownie Protein Cookies (Crumbl Copycat)

Dessert? Snack? Post-workout fuel? All of the above. These buckeye brownie cookies are soft, sweet, & secretly packed with 30g protein. If you skip the icing, they aren’t super sweet so add 1/4 cup monk fruit blend sweetener or allulose. Hope you love these! They’ve been so good every afternoon with a creamy coffee as a feel-good treat. 

Wet ingredients :

1 c pumpkin puree or cooked sweet potato (can’t taste promise & yay for vitamin A)

1/2 c liquid egg whites

1 c nonfat Greek yogurt

1 tsp vanilla extract

1 tsp cake batter extract 

Dry Ingredients :

2/3 c The Peachie Sppon Chocolate Protein or The Peachie Spoon Cookies and Cream Protein Powder

1/2 c coconut flour 

2 T cocoa or cacao powder (unsweetened)

2 tsp baking soda 

STEPS

1)In a large bowl, combine wet ingredients and stir. Add dry ingredients and stir to combine. 

2)On a large lined sheet pan, form into 6 large cookie shapes. Mine were about 1/2 cup of batter a piece. If you have an XL sheet pan, use that. 

3)Bake at 375° for 12-15 minutes. Place on a cookie rack to cool. After cooling, make icing below and spread evenly on cooled cookies. Store in the fridge for up to a week. I like to microwave mine for 15-20 seconds before enjoying. They freeze well too!

PEANUT BUTTER ICING 

8 oz block reduced fat cream cheese, room temp so set on counter for a bit 

1/4 c nonfat Greek vanilla yogurt 

3 T monk fruit or sweetener of choice (used @swervesweetie confectioners but granulated works too) 

1 tsp vanilla extract 

1/4 c pb powder 

Stir ingredients in a bowl and spread over cooked and cooled cookies. If desired, melt and drizzle dark chocolate chips over iced cookies.

These look so good! I think the calories per cookie may be off per the macros listed though 🤔

9 grams fat = 81 calories
13 grams carbs = 52 calories
24 grams protein = 92 calories

Total calories per cookie = 225

These look delicious! I only have your vanilla protein powder. Would I need to add additional cocoa powder to the mix for a more chocolatey flavor? What would you suggest?

Yes! Add 2 tbsp unsweetened cocoa powder and no other changes needed
