Brownie Batter Smoothie

Blend unsweetened almond milk with a dash of pink salt, natural peanut butter, chocolate protein powder, and a scoop of chocolate or unflavored collagen. Add unsweetened cacao powder and a hint of vanilla extract for extra flavor. For a thicker texture, include ice, frozen cauliflower or squash, and whole psyllium husk. INGREDIENTS

  • 1 c unsw almond milk

  • dash pink salt

  • 2 T natural peanut butter (only peanuts and salt as ingredients)

  • 1 serving chocolate protein powder

  • 1 scoop chocolate or unflavored collagen

  • 1 T unsw cacao powder

  • 1/2 tsp vanilla extract

  • 1 cup ice

  • 1/2 c frozen cauli, squash, or zucchini (optional)

  • 1-2 T whole psyllium husk (use 1 T if husk powder)

  • 1 - cooked and cooled sweet potato (fist size)

  • 1T cacao nibs, optional topping

    STEPS

  1. Add all ingredients, except cacao nibs in the order listed to the blender and blend well.

  2. Topped here with cacao nibs for a crunch and that vital chewing so you’re satisfied.

This was such an enjoyable dinner! Blood sugar was 109 after one hour! So happy to see results quickly. I couldn’t even taste the sweet potato! I was very surprised. I use pumpkin in the brownies and now curious about the sweet potato.
