Tzatziki Chicken Salad

This recipe is a Mediterranean-inspired delight that's perfect for a light and flavorful meal.

This salad features tender, cooked chicken breasts, paired with the creamy and tangy goodness of tzatziki sauce. The vibrant combination of chopped red onion and crisp cucumber adds a delightful crunch and a burst of freshness to each bite.

It's a quick and easy recipe that's ideal for a simple, satisfying lunch or dinner. Enjoy the Mediterranean flavors and the convenience of this Tzatziki Chicken Salad!

INGREDIENTS

  • 3 lbs chicken breasts, cooked (I used the Costco pulled chicken in a bag)

  • 1 12 oz tzatziki sauce

  • 1/2 red onion, chopped

  • 1/2 cucumber, sliced

    STEPS

  1. Combine ingredients into a bowl. Stir well.

Makes 10 - 1 cup servings but servings are an ish. I’m never worried about going over on protein so if I'm super hungry I’ll totally eat more than 1 cup. I don’t measure. Favorite ways to enjoy it are on toast, a wrap, with crackers & salad, or on a baked potato.

This looks amazing! Will it keep for a few days? Wasn’t sure with the cucumber but I’d love to eat it for lunch all week!

Tried this recipe last night with naan, homemade tzatziki, and added a few red bell pepper chunks. It was really tasty!
