Easy Overnight Chia Jam

My Easy Overnight Chia Jam is a perfect topper for yogurt bowls, overnight oats, protein pancakes, chia pudding, smoothies, toast with eggs, or even a sweet potato with greek yogurt and peanut butter.

You’d have to eat about ⅓ cup to be a whole serving of starch, so no biggie to add a couple tablespoons to anything.

INGREDIENTS

  • 2 cups any berries, frozen (I used mixed berries)

  • ¼ c chia seeds

  • 1 orange, juiced

  • 2 T monk fruit sweetener, optional

STEPS

  1. Add all ingredients to a large bowl and stir. Cover and place in the fridge overnight. The next day once the berries are defrosted and soft, mash the berries with a potato masher to desired lumpy or smoothness. Add to individual jars or leave in the covered bowl. Store in the fridge. Good for 1 month.

  2. Sits overnight.
