Cookie Smoothie

This tasty concoction is perfect for those who crave the flavors of cookies but want a nutritious twist.

With a base of unsweetened cashew milk, almond butter, protein powder, and a choice of flax or psyllium husk (optional), this smoothie offers a protein-packed and fiber-rich start. A hint of vanilla or almond extract and a dash of pink salt enhance the flavor profile.

But here's where the magic happens—frozen riced cauliflower or yellow squash/zucchini gives it a creamy texture and added nutrition. A handful of ice keeps it refreshingly cool.

Now, for the cookie part, we blend in cacao nibs and granola for a delightful crunch. Just a few extra seconds, and you're ready to sip and savor the taste of cookies in a nutritious smoothie. It's a sweet treat you can feel good about! Don’t forget to add that vital crunch or chewing factor to your smoothie. Drinking your meal doesn’t give your brain the I’m satisfied signal we need to feel fully nourished and shut off hunger. Digestion starts with chewing. Our bodies are truly well made, so cool! This smoothie has the crunchies throughout and is one of my favorites.

INGREDIENTS

  • 1 c milk (used unsw cashew)

  • 1 T almond butter

  • 1 serving vanilla protein 

  • 1-2 T flax or psyllium husk (optional)

  • 1/2 tsp vanilla or almond extract 

  • 1/4 tsp pink salt

  • 1 c frozen riced cauliflower or yellow squash/zucchini (used whole frozen squash this time)

  • 1 c ice

  • Blend & add

  • 2 T cacao nibs 

  • 2 T granola 

STEPS

  1. Add ingredients, through ice to blender and blend well. Stop and add the nibs and granola. Blend on low 3 seconds so keep the crunchies throughout.
