INGREDIENTS

1 lb turkey ground breakfast sausage

1 16 oz carton egg whites

6 whole eggs

1 onion, chopped
-
1/2 package mushrooms, chopped

1/2 package grape tomatoes, cut in half

1/2 bag broccoli, chopped

1 tsp thyme
-
1 tsp garlic powder
-
1 tsp each salt & pepper

1/4 c aged cheddar, shredded
STEPS

In a heated skillet over medium heat brown sausage and crumble.

Add veggies and cook for 5 minutes to soften.

While cooking add eggs and whites to a bowl. Add seasonings to eggs and whisk.

Add meat and veggie mixture to a glass 9x13 dish. Pour egg mixture over meat and top with cheese.

Bake at 400° for 15 minutes or until set. Switch the oven to broil on high for 1 minute or so to brown the top if desired. Watch it because it burns quickly.
Notes: I usually try to buy turkey sausage without msg like Jennie-O brand. I actually make this for dinner more than brunch because we love a breakfast for dinner night. Also, this is on our Christmas morning and Easter brunch menu. It’s perfect because no starch, so perfect protein and fiber to go with your traditional cinnamon rolls, pastries, chocolate Santa or Bunny, or whatever fun sentimental holiday sweets and keep your blood sugar more balanced and feeling good so you can focus on the people and conversations.

I made this as “meal prep” last night - thinking to have for easy breakfast when I don’t have time before work to make a smoothie. I warmed up a piece in the microwave for breakfast this morning. AMAZING! The seasoning and number of veggies is perfection! My bake time in a glass 9×13, convection oven at 400 degrees was closer to 30 mins.

Can depend on your dish for sure 15-25 min usually. Cook until set in the center
