Yogurt Stuffed Sweet Potato

A wholesome and satisfying treat that's both simple and delicious. Begin with a medium-sized sweet potato, baked to perfection until it's soft and sweet. Then, create a creamy filling by scooping out the flesh and mixing it with nonfat Greek yogurt or cottage cheese. This provides a protein-rich and luscious base for your stuffed sweet potato.

For an extra layer of flavor, consider adding a dollop of nut butter, be it almond, peanut, or your favorite variety. Sprinkle it all with a touch of cinnamon or pumpkin pie spice to enhance the overall warmth and taste.

INGREDIENTS

  • 1 medium sweet potato

  • 1/2 c nonfat Greek yogurt or cottage cheese

  • 1-2 T nut butter

  • 1/2 tsp cinnamon or pumpkin pie spice

     

    STEPS

  1. Wash and stab the potato with a fork and microwave for 4 minutes on each side.

  2. Top with yogurt, nut butter, and spices. I added a little granola too for a crunch.

     

    Cold potatoes are a resistant starch and a prebiotic. These feed the good gut bacteria (probiotics). Also, eating any cooked then cooled potato will lessen the blood sugar effect and keep your levels lower. So cool! Same goes for rice so yay for sushi. Even when reheated.
