  • 1 medium sweet potato

  • 1/2 c nonfat Greek yogurt or cottage cheese

  • 1-2 T nut butter

  • 1/2 tsp cinnamon or pumpkin pie spice

    STEPS

  1. Wash and stab the potato with a fork and microwave for 4 minutes on each side.

  2. Top with yogurt, nut butter, and spices. I added a little granola too for a crunch.

    Cold potatoes are a resistant starch and a prebiotic. These feed the good gut bacteria (probiotics). Also, eating any cooked then cooled potato will lessen the blood sugar effect and keep your levels lower. So cool! Same goes for rice so yay for sushi. Even when reheated.
