INGREDIENTS

  • 10 oz or more mixed greens or spinach

  • 1 grapefruit, sliced

  • 2 oranges or tangerines, sliced

  • 1/2 red onion, diced

  • 1 avocado, sliced

  • 2 oz crumbled feta, goat, or Gorgonzola

  • 1/4 c pecan halves (or any nut)

  • Lemon Tahini Dressing:

    • 2 T tahini, I use the squirt bottle from Walmart (cashew or almond butter works too)

    • 1 lemon, juiced

    • 1/4 c water

    • 1 tsp garlic powder or 1 clove, minced

    • 1 tsp each salt & pepper

    • 1 T apple cider vinegar

STEPS

  1. Assemble salad.

  2. Shake up ingredients in a jar with lid. Dressing is good for up to 2 weeks in fridge but I used the whole batch on this salad
