Welcome back to my series where I take viral recipes and make them more healthy. This one I upped the protein and lowered the fat carbs, and calories. This recipe is so easy! Who doesn’t love a full meal in the slow cooker. Fix it and forget it. Original recipe from @hopegarcia2018 on TikTok.

INGREDIENTS

  • 3 lbs gold potatoes, cut into 1 “ pieces
  • 1 small onion, chopped
  • 1/2 tsp pepper
  • 1 1/2 tsp Cajun seasoning (do less if sensitive to spicy)
  • 2 - 12 oz uncured chicken sausage, sliced (used Walmart market side brand)
  • 2 - 12 oz bags fresh green beans, cut into 2” pieces (about 1 1/2 lbs)
  • 1 Tbsp minced dried onion 
  • 1 tsp beef bouillon or cube 
  • 1/2 tsp garlic powder
  • 1/3 stick of butter (about 5 Tbsp)

STEPS

  1. Add potatoes and chopped fresh onion to the bottom of a slow cooker. Season with salt, pepper, and Cajun seasoning. Toss to coat evenly.
  2. Layer the sliced chicken sausage and green beans on top. Sprinkle with dried minced onion and garlic powder. Add the bouillon.
  3. Place butter evenly over the top.
  4. Cover and cook on low 6 to 7 hours, or high 4-5 hours. Stir a few times while cooking (if possible) Serve warm and enjoy! Makes 7 - 2 cup servings.

This sounds amazing!
2 questions:
1-could you use frozen green beans? (I have tons to use up)
2-there’s no liquid?? I was always taught you had to have a cup of liquid for a slow cooker to work correctly. Now, I’m curious!

Yes to frozen! I dont think it’ll necessarily take longer to cook. Maybe the butter is liquid. It works ha.
