MEAT MIXTURE
1 lb lean ground beef or 93% turkey (that’s what I used this time)
1/2 tsp salt and pepper
1/2 tsp smoked paprika
1/2 tsp garlic powder
handful diced onions.

FIXINGS
4 high fiber tortillas, any work
4 slices desired cheese, I used the “fake cheese” American🙃to be authentic
1/2 onion, diced (some for topping, some for meat mixture)
1/4 c pickles, diced
1 c iceberg, chopped

SAUCE
1/3 cup nonfat Greek yogurt
1 T yellow mustard
2 T pickle juice or white vinegar
1/4 tsp pepper

STEPS
In a bowl, add seasonings and handful of onion to meat and mix well with hands or a spoon.
Heat a skillet on the stovetop to medium heat, press 1/4 of the meat mixture onto a tortilla and cook in the sprayed and heated skillet.
Cook about 4-5 min until meat is cooked through and flip. Add cheese and cover pan.
Cook one more min or so until cheese is meal red.
While they’re cooking, in a small bowl make the the sauce and store to combine. Get your fixings ready to assemble. One lb of meat makes 4 so I doubled when cooking for my whole family and all the guys had 2.
