
This is such a fun and lightened-up cake for any time of the year. Berries are a great addition to the top for a ๐บ๐ธ Patriotic summertime cake or make it festive with holiday sprinkles for any celebration. In your plate, balance this is mostly a healthy fat source unless adding fruit, then it would be your starch also. Nobody will know itโs blood sugar friendly and itโs super duper moist too. Itโs a hit every time.
INGREDIENTS

1 cup almond flour

3/4 cup coconut flour

2 tsp baking soda

1/4 tsp salt

3 eggs

1/4 cup butter, softened

1/2 cup unsweetened apple sauce

1 cup nonfat Greek yogurt

1/4 cup almond milk
-
1 tsp vanilla extract

1 cup granulated sweetener, I used monk fruit/erythritol blend. Love the monk/allulose blend too.ย
- Cream Cheese Icing

1 - 8 oz block 1/3 less fat cream cheese, softened

1/2 tsp vanilla extractย

1/4 cup confectioners sugar replacementย

STEPS

In a large bowl, add flours, baking soda, and salt. Stir to combine and set aside.

In a large mixing bowl, add eggs, softened butter, yogurt, milk, vanilla extract, and applesauce.ย

Mix with a mixer on low until well combined.

Add granulated sweetener and mix on low/medium until combined.ย

Add flour mixture and mix until all incorporated.ย

Pour into a greased 13 x 9 glass dish and bake at 325ยฐ for 45-50 minutes.ย

While baking, make Cream Cheese Icing.ย

In a glass bowl microwave cream cheese 30 seconds if not softened yet.ย

Add vanilla and sweetener and mix with a mixture until desired icing consistency is achieved. Mine took 2 minutes.ย

Once your cake has cooled, add icing. Slice into 12 square pieces and store in the fridge, covered. Good for a week.ย

Can this be made into cupcakes? Any way to add protein?

Iโd recommend another of my recipes that has protein. Search ๐ โyellow cakeโ and the Crumbl copycat cakes will pop up. Cupcakes should work and cook 20 min or so
Followed the recipe exactly, my batter was pretty thick so it didnโt pour, I had to spread it in the pan but it was delicious! Mine turned more golden brown and was done in about 35 minutes. I skipped the icing and just put a little Reddi-Wip on top with berries. This one will be on repeat this summer!
