
A light summertime supper that sooo easy and loaded with lean protein and veggies for the perfect feel good balance the whole family will love.
INGREDIENTS
- 2 c Bone Broth
- 1.5 lbs chicken breast or turkey tenderloin
- 1 white or sweet onion, chopped small
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp Italian seasoning
- 3/4 c uncooked rice, used organic white jasmine
- 1 - 10 oz bag frozen riced cauliflower
- 2 lemons, juiced and zest (divided)
- 1 - 12 oz bag chopped broccoli florets
- 1 cup crumbled feta cheese
STEPS
1)Chop or cut raw meat into 1” pieces and place in slow cooker
2)Season with spices and salt/pep. Add onion, rice, caulk rice, bone broth, and juice of 1 lemon + 1 tsp zest.
3)Cover and cook on high 3 hours or low 4 1/2-5 hours or until liquid is absorbed into the rice.
4)Stir and add broccoli and juice of other lemon + desired rind (about 1 tsp). Cover and cook 20-30 more minutes on low until broccoli is tender. Stir and add feta, stir to combine and enjoy! Can top with thinly sliced lemons for a pretty garnish, if desired.
Makes 5 - 1 1/2 cup servings

Could you use chopped up fresh broccoli and put it in at the beginning, kind of like your chicken broccoli soup recipe? Or would it mess up the rice?

I’d think that would work fine!
I made this for dinner last night, and this recipe is a WINNER! So so good. Fresh-tasting because of the lemon, creamy/risotto-like texture, and so filling!
This was a hit for our entire family, including a 1.5 and 4 year old!
This made it quickly into our “repeat soon” list! Highly recommend!

Can I use frozen chicken breasts? If so does the cooking time change?

It may take longer. Just make sure they’re cooked through with a meat thermometer
Can I use all cauli rice? Same amount of broth?

Haven’t tried but yes! The broth is just for the rice so maybe half the broth?
This was so good! I put it all in the instant pot (except broccoli & feta) and used frozen tenderloins from Costco.
