Supreme Pizza Chicken Salad

This recipe idea popped into my head while getting a haircut. Recipe creation can be funny. I was hungry for lunch and thinking about supreme pizza flavored things instead of an actually traditional warm pizza. Chicken salad is so good as a lunch prep in the summer months or to take to the lake or beach for a picnic. It’s so good scooped up in corn chips or crackers, on a soft pita, tortilla, or bread (we loved pizza sauce on the pita/tortilla with too), or just dive in with a spoon for a lower-carb meal. You can’t go wrong. Leave out or add in more pizza toppings, as desired. We all loved this one. Can’t wait for you to try! 

INGREDIENTS

3-4 chicken breasts, cooked and shredded (about 2.5-3 lbs raw) 

1 1/2 c nonfat Greek yogurt or blended smooth cottage cheese

4 oz 1/3 less fat cream cheese, softened 

3 T red wine vinegar  

1 T Italian seasoning

1/2 tsp pepper 

1/2 tsp salt 

1/3 c jarred banana peppers, rough chop if desired 

1/3 c jarred sliced black olives

1/2 c sun-dried tomatoes, chopped 

1/2 red onion, diced small

1/2 fresh green bell pepper, diced small

1 - 4 oz pkg uncured turkey pepperoni

1/2 c shredded Parmesan cheese 

1 tsp red pepper flakes (optional heat, if desired)

Optional topping 

Fresh basil, chopped 

STEPS

1)If you haven’t cooked your chicken, in a large stock pot place 3-4 chicken breasts and cover them with water. Just to cover them. Bring to a boil over high heat. Cover and turn down to low heat and cook covered on low for 15 min. Make sure it’s done cooking through. To shred in blender, one breast at a time, blend for 5 seconds or until shredded. Too long and you’ll have chicken baby food. It’s quick ha. 

2)To make the chicken salad, add Greek yogurt and cream cheese to a large bowl with red wine vinegar, Italian seasoning, salt, and pepper. Stir well until combined and smooth. Then, add chicken and the rest of the ingredients and stir well until all are incorporated together. Makes about 8.5 cups total and 8 - 1 cup servings. 

Store in fridge, good for up to 5 days.

Delicious!! Made a crunch wrap, and topped with a little pizza sauce. Will be on repeat for the summer 😊
