8-10 oz mixed greens

1/3 c fresh berries, any work!

2-3 oz pomegranate

1/4 c pecans

6 oz crumbled feta or goat cheese
Blueberry Citrus Vinaigrette

1/4 c apple cider vinegar

1 orange, juiced
-
1 T extra virgin olive oil
-
3 T water
-
1/4 c blueberries (if you use frozen wild it’ll be super purple and pretty)

4-5 fresh mint leaves
-
1/2 shallot, chopped or 1/2 tsp onion powder

1/2 tsp each salt & pepper

1/2 tsp cumin
STEPS
Blend well in blender or food processor.
Good for up to 10 days in the fridge but I use this whole recipe on the salad. Makes 6 - 2 cup servings (with dressing).
