Summertime Salad

INGREDIENTS

  • 8-10 oz mixed greens

  • 1/3 c fresh berries, any work!

  • 2-3 oz pomegranate 

  • 1/4 c pecans

  • 6 oz crumbled feta or goat cheese

    Blueberry Citrus Vinaigrette  

  • 1/4 c apple cider vinegar

  • 1 orange, juiced

  • 1 T extra virgin olive oil

  • 3 T water 

  • 1/4 c blueberries (if you use frozen wild it’ll be super purple and pretty)

  • 4-5 fresh mint leaves

  • 1/2 shallot, chopped or 1/2 tsp onion powder

  • 1/2 tsp each salt & pepper

  • 1/2 tsp cumin 

    STEPS

    Blend well in blender or food processor.

    Good for up to 10 days in the fridge but I use this whole recipe on the salad. Makes 6 - 2 cup servings (with dressing).
