Sugar Free Strawberry Lemon Mocktail

I promise no sugar or alcohol can be fun! I haven’t had alcohol in 5 years now and recipes like this make it entertaining and doable. This is so refreshing and feels fancy. Love the blood sugar hack with the acetic acid in ACV, keeping post-dinner blood sugar happy if you sip on this while you cook. It’s always individual but this hack always works with my blood sugar and my CGM when I’ve tested it. So easy and cool. I like the vinegar addition for a little kick like alcohol can give, and it helps with my pre-dinner snacking so I can “make it” to dinner.

INGREDIENTS

3 frozen strawberries 

2 T lemon juice + a wedge (washed well)

1 T monk fruit or desired sweetener (optional)

1 T apple cider vinegar, optional

Desired ice cubes

Sparkling water, plain or flavored (I’ve tried several flavors and really any can work) or diet ginger ale & skip sweetener 

Mint sprig (optional garnish)

STEPS

1)In a glass, muddle/mash strawberries, lemon juice, rind wedge, and sweetener. OR blend berries, lemon juice, wedge of rind, and sweetener in a blender then pour frozen mix into glass. If using frozen berries, you may need to let sit or microwave to soften for about 1 min. 

2)Add ACV and ice cubes to the glass. Pour sparkling water or diet ginger ale to the rim and stir. Garnish with fresh mint and lemon slice if feeling fancy.

This recipe makes one serving per mocktail
