Skillet Frittata

A versatile and hearty dish that's perfect for breakfast, brunch, or any meal of the day. Begin by choosing your preferred protein: either a 12 oz package of chicken sausage links or 1 lb of ground turkey sausage. Cook them to perfection in a skillet until they're browned and flavorful.

Add a cup of chopped veggies of your choice for added texture and nutrition. The possibilities are endless, so you can customize your frittata to suit your taste. In a separate bowl, beat together 5 eggs and 1 16 oz carton of liquid egg whites. Season the mixture with salt, pepper, sage, thyme, and a touch of garlic powder for a burst of flavor.

Once your protein and veggies are cooked, pour the egg mixture over them. If you like, sprinkle a quarter cup of cheese over the top for an extra layer of deliciousness.

  • 12 oz package of chicken sausage links or 1 lb of ground turkey sausage

  • 1 c veggies of choice, chopped

  • 5 eggs

  • 1 16 oz carton liquid egg whites

  • 1/2 tsp each salt and pepper

  • 1 tsp sage

  • 1 tsp thyme

  • 1/2 tsp garlic powder

  • 1/4 c cheese, if desired

    STEPS

  1. Brown meat in a skillet over medium heat. If using sausage links, cut into coins first. Add veggies, stir and cook to soften for a few minutes.

  2. Crack eggs into a small bowl, and add whites and seasonings. Stir and pour over meat and veggies in a skillet.

  3. Cover and cook over medium/low heat for 10-15 minutes until eggs are set.

  4. Broil on high in the oven uncovered if you’d like to get the top golden (make sure skillet is ok for oven first). Makes 7 servings.

    Notes: If you’re using a fattier sausage, like more than 5g of fat per link or serving. Just tweak and do less whole eggs and more whites if you want the fat moderate and not high. Super tweakable and up to you! It’ll taste the same and keep it more balanced. We love this for dinner too!
