Sausage Lentil Stew

Lentils are a carb/starch source, but such a high-quality one loaded with fiber and even some plant-based protein. They also pack in some essential nutrients like phosphorus, magnesium, zinc, folate, iron, calcium, magnesium, potassium, and zinc. So, a nourishing comfort meal that’s easy to fix in the morning in the slow cooker and enjoy the cozy aroma of dinner, ready to eat when you get home in the evening. You can also use precooked sausage, but cut it into coins first and add it to the slow cooker. No need to cook first. I’ve also used ground turkey breakfast sausage and it’s delish. Yay for high fiber and high protein in one meal.

INGREDIENTS

1 lb Italian chicken sausage, ground or fresh links with casings removed

2 cups green or brown lentils, rinsed

1 yellow onion, chopped

1 cup celery, diced

1 cup carrots, chopped

1 - 14.5 oz can diced or crushed tomatoes

3 cloves garlic, minced

4 cups chicken or beef bone broth

1 bay leaf

1 tsp cumin

1/2 tsp pepper

1/2 tsp salt

2 T red wine vinegar

Optional toppings :

Fresh basil

Parmesan cheese

STEPS

1)In a large skillet over medium heat, brown the sausage until crumbled and cooked through. Set aside.

2)In a slow cooker, add cooked sausage, and all remaining ingredients except the vinegar.

3)Cook in low 6-8 hours or high 3-4. Low is optimal if you have the time.

4)Once cooked, remove the bay leaf and add the red wine vinegar. Allow to cook 15 more minutes and enjoy! Makes 10 cups or 5 - 2 cup servings

Per 2 cups with 2 T Parmesan on top
