Rosemary Chicken (or turkey) Salad

My Rosemary Chicken Salad is a versatile dish that's great for using holiday turkey leftovers or chicken. This savory salad combines tender chicken or turkey with creamy avocado mayo or Greek yogurt (or both), a hint of mustard, and a mix of delicious toppings like nuts, pear, bacon, and fresh rosemary. It's a flavorful and satisfying option for lunch or dinner that's easy to put together. Enjoy the taste of comfort and simplicity in every bite!

INGREDIENTS

  • 3 lbs cooked chicken, chopped (about 4 breast) rotisserie or leftover turkey from the holiday works great too

  • ½ cup avocado mayo or Greek yogurt (or some of both)

  • 1 T dijon or spicy mustard

  • 1/2 red onion, diced

  • 1/4 c sliced almonds or walnuts

  • 1 pear, chopped

  • 3 pieces of bacon, cooked & crumbled

  • 1 tsp fresh rosemary, chopped (2 ish 3” sprigs)

  • 1/2 tsp salt

  • 1/2 tsp pepper

STEPS

  1. Combine all ingredients in a bowl. This is protein and healthy fat together so throw on salad greens, a wrap/tortilla, baked potato, or bread and you’ve got a quick easy balanced meal.

    Makes 6 - 1.5 cup servings per 1.5 cup w/Greek yogurt
