Slow Cooker Roast and Potatoes

A convenient and delicious way to enjoy a hearty meal with minimal effort, this recipe combines a tender chuck or round roast, complemented by the rich flavors of balsamic vinegar and garlic.

INGREDIENTS

  • 3-4 lbs chuck or round roast

  • 1/4 balsamic vinegar

  • 10 cloves garlic, fresh minced or 5 teaspoons of the jarred pre-minced

  • 1 c beef bone broth

  • 1 tsp Salt

  • 1 tsp Pepper

  • 1 -24 oz bag new or golden potatoes, chopped

  • 4 whole carrots, sliced

  • 1 package mushrooms, sliced (optional)

    STEPS

  1. Crock Pot: Place meat in a slow cooker. Add all other ingredients.

  2. Instant pot: Instant Pot set to manual mode for 60 minutes on high pressure.

  3. When time is up and the cooker beeps, turn off and allow pressure to release naturally for 15 minutes. After 15 minutes, use the quick pressure lever to release any remaining pressure. Carefully remove the lid and transfer roast and veggies to a warm plate.
