8 oz jarred salsa
1 T taco seasoning, optional

1 - 16 oz low-fat cottage cheese, I used @goodculture
1/4 cup nutritional yeast

STEPS
Make the Cottage Cheese Queso by blending all ingredients in a blender or food processor and set aside.
In a slow cooker, place chicken on the bottom, then beans, then salsa, then queso. Cook on low 4-5 hours or high 3 hours.
Remove chicken and shred. Return to pan and stir.
Serve over chips, salsa, or in a tortilla.
