Protein Stuffed Potato

INGREDIENTS

  • 1 rotisserie chicken

  • 1 potato, sweet or white

    STEPS

  1. If the potato is not cooked, wash and stab both sides with a fork.

  2. Microwave 4 minutes on each side, flipping over halfway through and cooking a total of 8 minutes. Another option if you’re a planner is to bake several potatoes in the oven as a meal prep. Stab both sides and bake at 400 for 1 hour, flipping over at halfway.

  3. Top with chicken, optional cheese, and dressing or hot sauce. I used Organic Girl white cheddar here.

    Notes: Sweet Potatoes and white potatoes have about the same amount of carbohydrates for energy so from a storing standpoint they’re super similar. Since they are the only starch at your meal you have “room” to store either one. I recently tested this meal with my GCM and had a higher spike in blood sugar than I like, but the sweet potato was ginormous, ha! Shoot for a potato about the size of your fist. That’s a great gentle guideline for serving suggestions. And remember, don’t let the ghosts of diets past tell you that potatoes are bad or sweet potatoes are superior to white. Nutrition science is always changing so we’ve gotta tweak and pivot. Try it, and go on how you feel after you eat.
