Protein Popcorn Muddy Buddy’s

INGREDIENTS

  • 1 - 4.6 oz bag of lesser evil popcorn (about 13 cups if popping your own)
  • 1/2 c chocolate chips, used Lilys to keep sugar free
  • 1/4 c natural peanut butter (only peanuts and salt for ingredients) 
  • 2 servings (divided) any flavor The Peachie Spoon Protein Powder
  • 1/4 c peanut butter powder
  • 1/4 c confectioners sugar replacement, used swerve brand monk fruit 
  • 2 T sprinkles, if desired (fun for holidays)

STEPS

1. Pour popcorn into a large bowl and set aside 

2. In a medium glass bowl, microwave chocolate chips and peanut butter until melted. I did 1 minute and stirred until smooth. You can also heat on the stovetop. Don’t over heat or it’ll be thick. If this happens, add some milk or water to thin. 

3. Add 1 serving protein powder to the chocolate mixture and stir until combined. Pour over popcorn and toss until most popcorn has some chocolate coating. Break up the large chunks.

4. In a small bowl, combine pb powder, 1 serving of protein powder, and confectioners sugar and stir to combine. Add sprinkles now if adding. Pour half of the powder mixture over popcorn and toss well, then pour the second half and toss. My bowl has a lid and I shook it up but you can also use a large paper sack or large ziplock to toss. And enjoy! Store in fridge or at room temperature in an airtight container. Good for a week or so. Makes 14 cups!

Anyone have any ideas on how to get the PB choc protein mix to actually stick to the popcorn? I’ve added milk to thin and it still just makes tiny balls instead of sticking to the popcorn which makes it way less fun to eat and you get punched in the face with the protein/stevia flavor instead of it being spread over the popcorn.

This was so good, the whole family loved it! I"m wondering if this would work with Chex cereal as well, may try it.

This is very tasty. The second time I made it, I added a little bit of coconut oil to the melted chocolate chips and that helped evenly coat the popcorn. I then added 1 Tablespoon of cinnamon to the dry mix. Sooooooooo goooooood.

Lakanto makes one with allulose blended or an allulose sweetener would be an option
