
For a quick lunch summertime or snack. Loaded with vitamin C and potassium. Love to eat what’s in season and this is a fave in the summer.
INGREDIENTS

2 large heirloom tomatoes

1/2 c low-fat cottage cheese

4 oz deli turkey (uncured if you can)

1 lemon, juiced

desired salt, EBTB seasoning, oregano/Italian seasoning
STEPS

Slice tomatoes and add lemon juice and salt on each slice

Add mozzarella and oregano/Italian seasoning to 2 slices and cottage cheese, deli turkey, and EBTB seasoning to 3 slices. I had one left with just lemon and salt. Can’t mess up!
