Pork Carnitas Stew

 

INGREDIENTS

  • 3 lb pork or turkey tenderloin 

  • 1 onion, chopped

  • 1-7 oz can diced green chilies

  • 1 jar green salsa verde (15oz)

  • 2 cups chicken bone broth

  • 1 - 10 oz bag frozen corn or 1 - 24 oz bag potatoes, chopped 

  • 4 cloves minced garlic 

  • 1 tsp oregano

  • 2 tsp cumin

  • 1 tsp each salt and pepper 

  • 1 yellow squash or zucchini, chopped 

    STEPS

    1. Put all ingredients in slow cooker in the order listed or use slow cook option on instant pot.

    2. Low 6-8 hrs or High for 4 hrs or so. 

    3. Remove meat and shred, and put back before eating.

    Yummy optional toppings- cheese, Greek yogurt/sour cream, avocado, pickled onions, cilantro, & chips are always fun. I had a few chips and 1/2 and avo in mine bc used turkey tenderloins so needed some fun fat toppings.

    PROTEIN pork, bone broth
    FAT a little in pork
    FIBER onion, salsa, zucchini
    CARB/STARCH corn or potatoes and some chips to top, if desired
