INGREDIENTS

3 lb pork or turkey tenderloin

1 onion, chopped

1-7 oz can diced green chilies

1 jar green salsa verde (15oz)

2 cups chicken bone broth

1 - 10 oz bag frozen corn or 1 - 24 oz bag potatoes, chopped

4 cloves minced garlic
-
1 tsp oregano
-
2 tsp cumin
-
1 tsp each salt and pepper

1 yellow squash or zucchini, chopped
STEPS

Put all ingredients in slow cooker in the order listed or use slow cook option on instant pot.

Low 6-8 hrs or High for 4 hrs or so.

Remove meat and shred, and put back before eating.
Yummy optional toppings- cheese, Greek yogurt/sour cream, avocado, pickled onions, cilantro, & chips are always fun. I had a few chips and 1/2 and avo in mine bc used turkey tenderloins so needed some fun fat toppings.
