Pesto Lemon Chicken Sausage

This is a quick and flavorful dish that effortlessly combines the zesty essence of lemon with the rich taste of pesto. Start with a package of your favorite fully cooked chicken sausage—brands like Green Wise, Adele’s, or Amylu work beautifully.

Enhance the dish with 2 tablespoons of pesto, infusing it with aromatic basil and the nutty richness of Parmesan. For a low-carb twist, incorporate a bag of frozen cauliflower gnocchi, providing a wholesome and satisfying alternative.

To brighten the flavors, squeeze the juice of one lemon into the mix, adding a citrusy burst that complements the savory elements. The Pesto Lemon Chicken Sausage is a delightful medley of convenience and taste, perfect for a quick and delicious meal.

INGREDIENTS

  • 1 package fully cooked chicken sausage (Green Wise, Adele’s, Amylu are my go-tos)

  • 2 T pesto

  • 1 bag frozen cauli gnocchi

  • 1 lemon, juiced

    STEPS

  1. Chop sausage into coins. In a sprayed skillet over medium heat add sausage and frozen gnocchi. Cook for 5 min or so. You may need to cover the skillet to cook gnocchi in the middle.

  2. Once browned, add pesto and lemon juice. Heat 3-4 more minutes and serve over a bed of salad greens. I usually spray my greens with olive or avocado oil, salt, pepper, & lemon juice.

    Notes: Adding lemon juice to any leafy green will increase the absorption of phytonutrients. If not a sausage fan, use a rotisserie chicken.
