1 package fully cooked chicken sausage (Green Wise, Adele’s, Amylu are my go-tos)

2 T pesto

1 bag frozen cauli gnocchi

1 lemon, juiced
STEPS

Chop sausage into coins. In a sprayed skillet over medium heat add sausage and frozen gnocchi. Cook for 5 min or so. You may need to cover the skillet to cook gnocchi in the middle.

Once browned, add pesto and lemon juice. Heat 3-4 more minutes and serve over a bed of salad greens. I usually spray my greens with olive or avocado oil, salt, pepper, & lemon juice.
Notes: Adding lemon juice to any leafy green will increase the absorption of phytonutrients. If not a sausage fan, use a rotisserie chicken.
