Peanut Butter Protein Granola

Low carb/keto, gluten free, dairy free, sugar free…almost all the frees if you need in a granola! It’s soft and an oatmeal cookie like texture.

I love to use as a yogurt, cottage cheese, or smoothie topper. With some almond or coconut milk, a great on the go snack or sweet tooth fix. 

INGREDIENTS

1 c oats gf if needed, used old fashioned 

1/2 c vanilla protein powder 

1/2 c ground flaxseed or meal 

1 c salted peanuts 

1 tsp cinnamon (optional but I loved it with)

1/2 c egg white liquid

1/4 c peanut butter (natural drippy kind)

STEPS

Combine dry ingredients in a bowl. Add peanut butter and egg whites, stir.  Press flat onto a sheet pan. Bake at 350° for 10-15 min. Mine took 13. Watch closely because it’ll burn quickly. Store at room temp or fridge in air tight container. Good for a week. Makes 10 servings.
