  • 3 peaches, diced (wash well if leaving skin)

  • 1 T fresh Basil, chopped

  • dash salt & pepper

  • 1/2 cup feta cheese, crumbled or fresh mozzarella, sliced small

  • 2 T balsamic vinegar
