PB Salted Caramel Protein Fudge

Peanut Butter Salted Caramel Protein Fudge Recipe

These are super light and blood sugar friendly!

INGREDIENTS

  • 1 - 9 oz bag white chocolate chips (used lilys brand for low sugar)

  • 1/4 c salted caramel protein powder (The Peachie Spoon Vanilla Protein Powder works too!)
  • 1/2 tsp vanilla extract 
  • 1 T natural PB

 

STEPS

  1. Melt 1 bag of lily’s white chocolate chips over medium heat stirring constantly or in the microwave in a glass bowl for 1 min or so. Don’t over heat it it’ll be super thick.

  2. Add protein powder and extract, stir until combined.

  3. Add milk as needed if you overcooked or using a plant based protein powder.

  4. Pour into a 8 X 8 glass dish lined with parchment and drizzle with peanut butter and sprinkle course salt, if desired.

  5. Place in the fridge to set 30 min - 1 hour.

  6. Slice and enjoy. Mine made 25 - 1“ pieces. Store in fridge or freezer.
