PB&J Protein Bites

peanut butter and jelly protein bites

There’s no season like berry🫐🍓season and these take like 5 min to throw together, so let’s do it. No sneaky sugars from honey or dates so super blood sugar friendly. No bake, keto-friendly, and gluten-free. These are super light and refreshing so great for the👙pool,🏖beach, 🎣lake, or an anytime dessert bc lower in fat. Get your 1/3 c measuring cup out and let’s do it!


INGREDIENTS

  • 1 c unsweetened apple sauce (I used 2 kids single serves)

  • 1 tsp vanilla extract 

  • 1/3 c vanilla protein powder

  • 1/3 c oats (can be GF if needed)

  • 1/3 c PB powder 

  • 1/3 c coconut flour

  • 1/3 c strawberries, chopped or bluebs (either fresh or freeze-dried works) or both

STEPS

  1. Combine all in ingredients in a bowl and form into balls. Makes 12. They’re super soft. Store in fridge or freezer. Good for about 3 days in fridge depending on the berries.
