There’s no season like berry🫐🍓season and these take like 5 min to throw together, so let’s do it. No sneaky sugars from honey or dates so super blood sugar friendly. No bake, keto-friendly, and gluten-free. These are super light and refreshing so great for the👙pool,🏖beach, 🎣lake, or an anytime dessert bc lower in fat. Get your 1/3 c measuring cup out and let’s do it!
INGREDIENTS
-
1 c unsweetened apple sauce (I used 2 kids single serves)
-
1 tsp vanilla extract
-
1/3 c oats (can be GF if needed)
-
1/3 c PB powder
-
1/3 c coconut flour
-
1/3 c strawberries, chopped or bluebs (either fresh or freeze-dried works) or both
STEPS
-
Combine all in ingredients in a bowl and form into balls. Makes 12. They’re super soft. Store in fridge or freezer. Good for about 3 days in fridge depending on the berries.

I hate to say this, because I love so many of your recipes! I really wanted to like these after using all these ingredients, but just couldn’t get past the texture. They were much better frozen, but ended up throwing them away, no one wanted to eat them.

Thanks for commenting and your feedback! They’re definitely a softer texture than my other energy bites but way lower in calories and fat so some like them better.
