PB Banana Protein Muffins

INGREDIENTS

  • Wet

    • 4 overripe bananas

    • 2 eggs

    • 2 tsp vanilla extract

    • 1/4 c natural peanut butter (almond works too)

  • Dry

    • 3/4 c coconut flour

    • 1/3 c vanilla protein powder

    • 1 tsp cinnamon

    • 1 tsp baking powder

    • 1/3 c dark chocolate chips (optional but not really)

      STEPS

  1. Mash bananas in a large bowl and add other wet ingredients. Stir well.

  2. Add dry ingredients, chocolate chips lastly. Stir.

  3. Scoop into a lined muffin pan.

  4. Bake 350° 20-25 min. Made 12 muffins. Store in the fridge. Good for a week.

    Notes: These pretty much are a starch because mostly bananas with a little fat and protein. Great fruit-free smoothie topper for chewing, yogurt bowl topper, or anytime blood sugar-balancing dessert as your starch. I eat 2 all the time too, don’t forget servings are just suggestions and if it's an active week or you’re just super hungry, your hunger and fullness cues are ultimately in charge of servings. The ultimate goal is to honor those.
