No Bake Single Serve Key Lime Cheesecake

Super light and 41g protein! Perfect sweet tooth fix for an after lunch or dinner or even a snack by itself. Love refreshing lime this time of year!

Indulge in a tangy and refreshing No Bake Single Serve Key Lime Cheesecake. This delightful treat combines low-fat cottage cheese and nonfat Greek yogurt for a creamy, high-protein base. Enhanced with a serving of vanilla protein powder and a splash of vanilla extract, the mixture is elevated with the bright, zesty flavor of freshly juiced lime and a hint of lime rind on top. Finished with a sprinkle of crumbled graham crackers, this single-serve cheesecake offers a perfect balance of sweet and tart, making it a satisfying and healthy dessert option.

INGREDIENTS

  • 1/2 c low-fat cottage cheese

    2 Tbsp nonfat Greek yogurt

    1 serving (about 2 Tbsp) The Peachie Spoon Vanilla Protein Powder

    1/2 tsp vanilla extract

    1 lime, juiced and some rind for topping

    graham crackers, crumbled, I used 3 @simplemills crackers

     

     

    STEPS

  1. Place all ingredients in a blender or food processor and blend until smooth.

  2. Pour into a small glass bowl and top with crumbled graham cracker and lime rind.

  3. Place in the freezer for 30 min or in fridge for a few hours or overnight. And enjoy!
