
New Year’s collards & black-eyed peas for good luck and wealth in the new year. Although I don’t really believe in luck, when I googled, I realized this is just a Southern thing, so don’t think I’m crazy. We do it every year. You just add a protein, and you’ve got a super mineral and nutrient-dense nourishing meal.
INGREDIENTS
Collard Greens -
- 12 oz bag chopped & washed collards (used kale bc my store was out) taste the same, right?!
- 2 cups bone broth
- 4-8 oz uncured bacon, ham, or pancetta, diced
- 1 tsp each pink salt & pepper
Black-Eyed Peas -
- 2 - 10 oz fresh black eyed peas (in the produce section usually this time of year)
- 2 cups bone broth (chicken or beef works for both)
- 4-8 oz uncured bacon, ham, or pancetta, diced
- 1 tsp each pink salt & pepper
*optional🔥kick add 1/2 tsp crushed red pepper. I added to collards only
STEPS
Collard Greens -
- Over medium heat in a large sauce pot, add collards, bacon, broth, and salt & pepper.

Stir, cover and cook until boiling. Turn to low and cook covered 40 min - 1 hour.
Can also do crockpot for 6-8 hrs on low or 3-4 hrs on high. You can’t mess up. So easy
Black-Eyed Peas -
- Over medium heat in a large sauce pot, add black-eyed peas, broth, and salt and pepper.

Stir, cover and cook until boiling. Turn to low and cook covered 1 hour or so or until softened
Can also do crockpot for 6-8 hrs on low or 3-4 hrs on high. You can’t mess up. So easy
Notes:
I usually add a protein source too. I used an already grilled chicken breast from Sam’s but chicken sausage and cottage cheese are faves too. Even red meat is a great option here. These recipes are low in fat and calories
