Million dollar spaghetti, but make it Peachie style, aka lightened up the calories and higher in protein and fiber. This one was a hit with my crew and makes 8 large servings so plenty of leftovers or a great meal prep option for the week.
INGREDIENTS
1 - 12 oz pkg desired pasta (used Carbe Diem fettuccine)
2 lbs extra-lean beef or turkey
1 -23.5 oz jar marinara sauce
1 cup shredded mozzarella or parm or a combo of both
High Protein Alfredo Sauce
1 c unsweetened almond milk (cashew or coconut works too)
1-16 oz low-fat cottage cheese
1 tsp cornstarch
1/2 tsp each salt +pepper
1/2 tsp italian seasoning
1/2 tsp garlic powder
1/2 c grated parmesan cheese
STEPS
1)First, cook pasta as the box directions suggest. And preheat oven to 350°
2)Meanwhile, put all the Alfredo ingredients in the blender and blend until smooth. Set aside.
3)In a large skillet over medium-high heat brown and crumble the meat until cooked through and pour marinara sauce over the meat. Turn heat to low to simmer.
4)In a sprayed glass 9x13 dish, place cooked noodles and pour Alfredo over noodles and stir until combined. Pour all the meat sauce over the mixture. Add shredded cheese evenly over the top and bake in a preheated oven for 10-15 min to melt the cheese and enjoy! You can also do broil hi the last few minutes to brown the cheese on top.
