Mexican Protein Pizza

Recipe for 2 pizzas (I usually double the recipe for a family dinner)

INGREDIENTS

  • 1 lb lean ground chicken, turkey, or beef (used 99% lean chicken)
  • 1 packet or 2 T taco seasoning
  • Desired toppings:
    • 1/2 c Shredded Mexican blend cheese or 1/4 c queso (did a combo of both)
    • 1/3 c salsa or taco sauce
    • Shredded iceberg lettuce
    • Diced tomato
    • Sour cream or Greek yogurt
    • Refried beans
    • Crumbled tortilla chips for a crunch 
    • Fresh cilantro 
  • Optional Taco Sauce: (Stir in a bowl and top pizza after cooking)
    • 1/3 c Greek yogurt or sour cream
    • 1/3 c red enchilada sauce (used siete brand)

STEPS

  1. Place chicken and spices in a bowl and use your hands to combine.
  2. Break into 2 equal parts and flatten into a pizza shape as flat as possible on a parchment-lined sheet pan. (Makes 2 pizzas)
  3. Bake at 400° in the oven for 25-30 min or 400° in the air fryer for 10-15 min. Make sure it’s cooked through with a meat thermometer.
  4. Turn up oven temp to 425° and add cheese and refried beans, if using. Cook another 5 min or so until melty and done. You can also broil on high for a few minutes if you want it more crispy.
  5. Add all other desired toppings and enjoy!

PROTEIN chicken, turkey, beef
FAT cheese, meat if not lean
FIBER lettuce, onion, salsa 
CARB/STARCH refried beans/chips or none if skipping those
