
Recipe for 2 pizzas (I usually double the recipe for a family dinner)
INGREDIENTS
- 1 lb lean ground chicken, turkey, or beef (used 99% lean chicken)
- 1 packet or 2 T taco seasoning
- Desired toppings:
- 1/2 c Shredded Mexican blend cheese or 1/4 c queso (did a combo of both)
- 1/3 c salsa or taco sauce
- Shredded iceberg lettuce
- Diced tomato
- Sour cream or Greek yogurt
- Refried beans
- Crumbled tortilla chips for a crunch
- Fresh cilantro
- Optional Taco Sauce: (Stir in a bowl and top pizza after cooking)
- 1/3 c Greek yogurt or sour cream
- 1/3 c red enchilada sauce (used siete brand)
STEPS
- Place chicken and spices in a bowl and use your hands to combine.
- Break into 2 equal parts and flatten into a pizza shape as flat as possible on a parchment-lined sheet pan. (Makes 2 pizzas)
- Bake at 400° in the oven for 25-30 min or 400° in the air fryer for 10-15 min. Make sure it’s cooked through with a meat thermometer.
- Turn up oven temp to 425° and add cheese and refried beans, if using. Cook another 5 min or so until melty and done. You can also broil on high for a few minutes if you want it more crispy.
- Add all other desired toppings and enjoy!
